From the Deep Fryer to the Reach-In Refrigerator, its vital that everything it is getting a thorough clean regularly. Here are some helpful instructions to ensure that you are doing things the correct way to meet hospitality kitchen cleaning standards.

Plastic Garbage Bin and Disposals

To clean:

  1. Brush wash all heavily soiled bins with a hot solution of active 2GO.
  2. Spray rinse with clean water and allow to air dry.
  3. Hose down garbage bins and disposables using a pressure cleaner.
  4. Allow to air dry.

Reach-In Refrigerators

To clean:

  1. Remove all food and place in a temporary refrigerated storage.
  2. Remove shelving and loose equipment and move to a sink. After washing, let air dry.
  3. Apply active 2GO to the interior of refrigerator. Brush and wash walls, floors, ceiling and both sides of shelving.
  4. Rinse well with clean water and wipe dry.
  5. Spray with hygenic DES 2GO and allow to air dry.
  6. Apply active 2GO to exterior surfaces. Cleans and wipe dry.

Cutting Boards

To clean:

Boards should always be cleaned and sanitised before uses.

  1. Brush all loose soil from the surface.
  2. Scrub with Virtue Sink Detergent, using a stiff-bristled brush. Dip the brush frequently in the detergent solution to obtain adequate wetting.
  3. Rinse thoroughly with clean water.
  4. Sanitise with Hygenic DES 2GO.
  5. Allow to air dry.

Fruit Juice Dispensers

To clean:

  1. Remove contents of reservoir to clean container.
  2. Wash all removable parts in a warm Virtue Sink Detergent solution.
  3. Fill reservoir with clean water and drain.
  4. Fill reservoir with a warm solution of Hygienic DES 2GO solution.
  5. Recirculate this solution for a minimum of three minutes. Rinse faucet by drawing clean water through it.
  6. Clean exterior surfaces by spraying with Hygienic DES 2GO solution and wiping with a clean cloth.

Deep Fryer

To clean:

  1. Allow fryer to cool and drain cooking oil. If oil will be re-used, filter and transfer it to a clean container or reservoir.
  2. Fill the deep well with enough water to cover heating coils.
  3. Add enough active 2GO solution so the deep fryer is filled with water.
  4. Thoroughly mix the cleaning solution concentrate with a long-handled brush.
  5. Turn on heat and bring temperature to 80-94°C.
  6. Run for 10-15 minutes until clean.
  7. Brush away any heavy deposits. Brush wash outside surfaces using the same cleaning solution.
  8. When tank is completely cleaned, turn head off and drain unit. Rinse thoroughly, three times with fresh hot water.
  9. Ensure fryer is dry before refilling with oil.

Sink Detergent

A Multi-use detergent formulated to cut through baked on grease. The high sudsing liquid is delicately perfumed with a clean fresh citrus scent. Green in colour. Add 10-50ml into sink with warm water depending on soiling.
